Each slice is packed with nutrients, making it a healthier alternative to traditional meatloaf. The mushrooms add a rich, savory depth while keeping the meatloaf tender and juicy.

Ingredients

  • 1 pound ground beef (or a vegetarian alternative like lentils or plant-based ground meat)
  • 1 cup finely chopped mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup ketchup (for glaze, optional)
  • 1 tablespoon brown sugar (for glaze, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped onions and mushrooms in a little oil over medium heat until they’re soft and the moisture has cooked off, about 5-7 minutes. Stir in the minced garlic and cook for another minute.
  3. In a large bowl, combine the ground beef, breadcrumbs, sautéed onion and mushroom mixture, eggs, salt, pepper, oregano, and Worcestershire sauce. Mix until well combined, but be careful not to over-mix.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. If using, mix the ketchup and brown sugar together and spread it over the top of the meatloaf.
  6. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
