This dish features layers of seasoned mushrooms and ricotta cheese rolled in thin slices of zucchini, topped with marinara sauce and melted cheese. It serves 4 and is perfect for a family dinner or meal prep.

Ingredients

  • 2 medium zucchinis, sliced lengthwise into thin strips
  • 8 ounces mushrooms, finely chopped
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prep the Zucchini: Preheat the oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips using a mandoline or sharp knife.
  2. Sauté the Mushrooms: In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushrooms, cooking until the mushrooms are tender and any moisture has evaporated (about 5-7 minutes). Season with salt, pepper, and Italian seasoning.
  3. Mix the Filling: In a bowl, combine the sautéed mushrooms with ricotta cheese and half of the Parmesan cheese. Mix well.
