- 1 block (14 oz) firm tofu, drained and cubed (optional)
- 2 tablespoons vegetable oil
- 2 cups jasmine rice or rice noodles, cooked according to package instructions

Instructions
- Prepare the Sauce: In a small bowl, whisk together sweet chili sauce, soy sauce, minced garlic, rice vinegar, sesame oil, and red pepper flakes. Set aside.
- Cook the Tofu (if using): In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add cubed tofu and sauté until golden brown and crispy on all sides. Remove from the pan and set aside.
- Sauté the Vegetables: In the same pan, add the remaining tablespoon of oil. Add sliced mushrooms and cook for 3-4 minutes until they start to brown and become crispy. Add bell peppers and snap peas, and stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
