Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup mushrooms, sliced (shiitake or button mushrooms work well)
  • 2 tablespoons miso paste (white or yellow)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Miso Glaze: In a small bowl, mix the miso paste, soy sauce, honey, olive oil, garlic, and ginger until smooth.
  3. Sauté the Mushrooms: In a skillet over medium heat, add sesame oil. Once hot, add the sliced mushrooms and sauté for about 5 minutes until they are tender. Season with salt and pepper, then remove from heat.
  4. Prepare the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Brush the miso glaze generously over the top of each fillet.
  5. Bake the Salmon: Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Combine and Serve: During the last few minutes of baking, add the sautéed mushrooms on top of the salmon to warm them through. Once done, remove from the oven and garnish with chopped green onions and sesame seeds.
