Ingredients

  • 1 cup basmati rice, rinsed and soaked for 30 minutes
  • 2 cups mushrooms, sliced (button or cremini)
  • 1 large onion, thinly sliced
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 2-3 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 bay leaf
  • 4-5 whole cloves
  • 2-3 green cardamom pods
  • 1 cinnamon stick
  • Salt to taste
  • 2 cups water
  • Fresh cilantro and mint leaves for garnish

Instructions

  1. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add sliced onions and sauté until golden brown. Remove half for garnishing later.
  3. Stir in ginger-garlic paste and green chilies, cooking for 1-2 minutes until fragrant.
  4. Add sliced mushrooms and cook until they release moisture and start to brown.
  5. Mix in turmeric powder, garam masala, bay leaf, cloves, cardamom pods, and cinnamon stick. Stir well.
  6. Add the soaked basmati rice and salt, mixing gently to combine with the mushroom mixture.
  7. Pour in water and bring to a boil. Reduce heat to low, cover, and cook for 15-20 minutes or until rice is tender and water is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with the reserved caramelized onions, fresh cilantro, and mint leaves.
